Golden, buttery toasted bread filled with gooey melted cheese and a sweet-heat jerk pepper jam that brings smoky spice, chilli warmth, and a touch of sweetness. Crispy on the outside, molten in the middle, and packed with bold Caribbean flavour - this toastie is simple, indulgent, and dangerously moreish. 🌶️🧀✨

INGREDIENTS Serves: 1

For the Jerk Blend Pepper Jam 🌶️:

  • 1 red pepper, finely chopped
  • 1 small red chilli, finely chopped (optional, for heat)
  • 2 tablespoons sugar (caster or brown)
  • 2 tablespoons apple cider vinegar or white wine vinegar
  • 1 teaspoon Jerk Blend spice
  • 1 tablespoon water

For the Toastie 🥪:

  • 2 slices of bread (sourdough, brioche, or white loaf)
  • 1 cup grated cheese (cheddar, mozzarella, or a mix)
  • 1 knob of butter

INSTRUCTIONS

Make the Quick Jerk Pepper Jam 🌶️🔥:

  • Add the chopped red pepper, chilli (if using), sugar, vinegar, water, and jerk blend to a small saucepan.
  • Cook over medium heat for 8–10 minutes, stirring regularly, until the peppers soften and the mixture thickens into a glossy, jammy consistency.
  • Remove from heat and let cool slightly.

Assemble the Toastie 🧀:

  • Lay one slice of bread down and sprinkle over half the grated cheese.
  • Spoon over 1–2 tablespoons of the jerk pepper jam, spreading evenly.
  • Top with the remaining cheese and finish with the second slice of bread.

Toast to Perfection 🥪🔥:

  • Heat a pan over medium heat and melt the butter.
  • Add the toastie and cook for 4–5 minutes until golden and crisp underneath.
  • Flip carefully and toast the other side for another 4–5 minutes until the cheese is fully melted and the bread is perfectly golden.
