Crispy tortilla chips loaded with tender Mexican Mix pulled pork, melted cheese, creamy guacamole, cool sour cream, and fresh pico de gallo. Packed with bold spices, juicy pork, and vibrant toppings, these nachos are the ultimate crowd-pleasing comfort dish — perfect for sharing (or not). INGREDIENTS Serves: 4

For the Pork Carnitas 🐖:

  • 1kg pork shoulder (boneless), cut into large chunks
  • 2 tablespoons Mexican Mix spice blend
  • 2 tablespoons olive oil
  • 1 orange, juiced1 lime, juiced
  • 1 onion, quartered
  • 3 garlic cloves, smashed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Nachos 🧀🔥:

  • 200g tortilla chips
  • 200g grated cheese (cheddar, Monterey Jack, or a mix)

For the Toppings 🥑🍅:

  • Guacamole
  • Sour cream
  • Pico de gallo
  • Fresh coriander, chopped
  • Jalapeños (optional)
  • Lime wedges

COOKING
INSTRUCTIONS

Season the Pork 🌶️:

  • In a large bowl, coat the pork chunks with Mexican Mix spice blend, olive oil, salt, and black pepper.
  • Massage well to ensure even coverage.

Slow Cook 🐖🔥:

  • Place the seasoned pork into a heavy pot or Dutch oven.
  • Add the orange juice, lime juice, onion, garlic, and water or stock.
  • Bring to a gentle simmer, cover, and cook on low heat for 1½–2 hours, turning occasionally, until the pork is fall-apart tender and most of the liquid has reduced.

Shred the Pork 🍖:

  • Remove the pork from the pot and shred using two forks. Discard excess fat if desired.

Assemble the Nachos 🧀:

  • Preheat the oven to 200°C (400°F).
  • Spread half of the tortilla chips over a baking tray.
  • Scatter over half of the pulled pork and half of the grated cheese.
  • Repeat with another layer to ensure every chip gets loaded.

Bake 🔥🧀:

  • Bake in the oven for 8–10 minutes until the cheese is fully melted and bubbling.

Top & Finish 🥑🍅:

  • Remove from the oven and dollop over guacamole and sour cream.
  • Spoon on fresh pico de gallo, sprinkle with chopped coriander, and add jalapeños if using.
