Jamaican Jerk Shrimp Tacos

Ingredients

For the Jerk Shrimp & Vegetables 🌮🍤🇯🇲: 16 large shrimp, peeled and deveined, 1 sliced red / yellow pepper, ½ sliced onion 2 tablespoons Jamaican jerk spice, 1 tablespoon olive oil

For the Mango Salsa 🥭🍅🧅🌿: 1 ripe mango, diced, 1 medium tomato, diced, ½ small onion, finely chopped, 1 lime (juiced), 1 tablespoon chopped coriander, ½ teaspoon salt

For the Sliced Avocado 🥑: 1 ripe avocado, sliced

For the Tacos 🌮: 4 hard shell taco shells

Cooking Instructions

Marinate the Shrimp & Vegetables 🌮🍤🇯🇲: In a bowl, toss the shrimp, sliced pepper and onion with 2 tablespoons of jerk seasoning and 1 tablespoon of olive oil. Let marinate for 10 minutes while you prepare the other ingredients.

Prepare the Mango Salsa 🥭🍅🧅🌿: In a bowl, combine the diced mango, tomato, onion, lime juice, chopped coriander, and salt. Mix well and set aside for 5 minutes to allow the flavours to meld.

Cook the Shrimp in the Oven 🍤🔥🇯🇲: Preheat the oven to 375°F (190°C). Place the marinated shrimp on a baking sheet lined with parchment paper. Roast for 12-15 minutes, or until the shrimp are pink and opaque.

Slice the Avocado 🥑: While the shrimp cooks, slice the avocado and set aside.

Assemble the Tacos 🌮: Place 4 shrimp in each taco shell, then top with a generous spoonful of mango salsa and a few slices of avocado.

Serve 😋🇯🇲: Serve the tacos immediately with extra cilantro or lime wedges if desired.
