Mexican Mix Steak Fajitas

Juicy, marinated beef fajitas sizzle with charred peppers and onions, wrapped in warm tortillas and served with rich, creamy guacamole and a zesty Pico de Gallo. A bold and smoky flavour for every bite! 🔥🌮🥑

Ingredients

For the Steak 🥩: 1 large beef fillet (250g) sliced into cubes or strips, 2 tablespoons Mexican Mix, 1 tablespoon olive oil

For the Vegetables 🫑 🧅: 1 red bell pepper, sliced, 1 yellow bell pepper, sliced, ½ onion, sliced, 1 tablespoon olive oil

For the Guacamole 🥑: 2 Avocados, ½ tomato, ½ onion, 1 lime, 1 small bunch of coriander, 1 tablespoon olive oil, 1 teaspoon of salt

For the Pico de Gallo 🍅🧅🌿: 2 medium ripe tomatoes, finely diced, ½ small onion finely chopped, 1 small bunch of coriander finely chopped ½ juiced lime, ½ teaspoon salt, ½ teaspoon black pepper, 1 tablespoon of sherry vinegar (red wine vinegar or apple cider vinegar), ½ jalapeño or chilli finely chopped (optional for extra spice)

For the Fajitas: 4 flour or corn tortillas, 1½ cups (150g) grated Cheddar or Monterey Jack cheese, ½ cup of sour cream

Cooking Instructions

Marinate the beef 🥩🇲🇽: In a bowl, toss the cubed or stripped beef with olive oil, and the Mexican Mix. Cover and let marinate for at least 15 minutes.

While the beef marinates… Prepare the Guacamole 🥑: Mash the Avocado, adding 1 tablespoon of olive oil and a teaspoon of salt 🧂. Add lime juice and Finely chop the onion, tomato and the coriander and add to the mix 🧅 🍅 🌿

While the beef marinates… Prepare the Pico de Gallo 🍅🧅🌿: In a bowl, combine the diced tomatoes, chopped onion, jalapeño (if using), and coriander. Add lime juice, vinegar, salt, and black pepper and stir well. For the best flavour, let it sit for 10 minutes before serving.

Cook the Vegetables 🫑 🧅 🧑‍🍳: Heat a large pan over medium-high heat and add 1 tablespoon olive oil, then the sliced peppers and onions. Sauté for 5 minutes on a medium heat until slightly charred and tender.

Add the beef 🥩: In the same pan, add the marinated beef cubes / strips. Cook for 5-7 minutes, stirring occasionally, until the beef is cooked to your liking.

Warm the Tortillas: Warm one side of the tortilla on a pan on medium heat for 2-3 minutes, flip and add the cheddar cheese whilst the other side of the tortilla warms 🧀🧀🧀

Serve 😋: Fill each tortilla with the beef and veggie mixture and top with guacamole, pico de gallo and sour cream
