Zaza Za'atar Halloumi & Quinoa Salad

A vibrant salad featuring crispy, golden halloumi, quinoa, refreshing cucumber, and fresh parsley. Combined with pomegranate, a tangy lemon dressing and our Zaza Za’tar blend, this dish is as satisfying as it is delicious. Ingredients

For the Salad 🧀🥗: 200g halloumi, sliced into thick pieces, 250 grams (1 cup quinoa), cooked and cooled, 2 cups fresh parsley, finely chopped, 1 cup fresh tomatoes, diced, ½ small white onion, finely chopped, 1 cucumber, diced, ½ cup pomegranate seeds

For the Dressing 🍋: 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon salt, ½ teaspoon black pepper

For the Za'atar Topping 🌿: 2 tabelspoons Zaza Za'atar spice

For the Pomegranate Molasses: 1 tablespoon pomegranate molasses (for drizzling)

Cooking Instructions

Cook the Quinoa 🍚: Rinse the quinoa under cold water, then cook according to the package instructions. Once cooked, fluff with a fork and let it cool.

Prepare the Veggies 🥒🧅: Finely chop the parsley, dice the tomatoes, cucumber, and chop the white onion.
Cook the Halloumi 🧀: Heat a non-stick pan over medium heat. Place the halloumi slices in the pan and cook for 2-3 minutes on each side, until golden brown and crispy.

Make the Dressing 🍋: In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.

Assemble the Salad 🥗: In a large bowl, combine the cooked quinoa, chopped parsley, diced tomatoes, cucumber, and white onion.

Top with Halloumi 🧀: Add the crispy halloumi slices to the salad and gently toss.

Sprinkle with Za'atar 🌿: Sprinkle the Zaza Za'atar spice over the salad for a burst of flavour.

Drizzle with Pomegranate Molasses: Drizzle 1 tablespoon of pomegranate molasses over the top to add a sweet and tangy finish.

Serve 😋: Serve immediately or chill in the fridge for 20 minutes before serving to let the flavours meld.
